Tim Mälzer is a German television chef, who was born in 1971. Tim became popular over television cooking shows. Since 2009, he has run a restaurant called “Bullerei” in Hamburg. And he now opened the restaurant “Überland” in 2019.

Tim Mälzer founded Überland together with an experienced business partner: Jimmy Ledemazel. Jim is the former restaurant manager of the “Aqua”, a 3 Michelin star restaurant in Wolfsburg, Germany.

Their beautiful new restaurant, decorated with malt, walnut and leather, combines culinary pleasure with a 6th sense experience.

The 17th floor of the building is reserved for private events & diners as well as company parties.

On the top floor there is a bar, a restaurant and a Chef’s Table, while on the 19th floor the roof terrace offers a wide view of the city.

Urban flagship gastronomy

The “urban flagship gastronomy” menu was developed by Tim Mälzer and promises some typical twists from him:

premium meats and fish
home-made pasta
seasonal side dishes from the region
and dessert variations
complemented by wine expertise and creative cocktails.

In addition, the TV chef will often be personally there in Überland, leading the kitchen.

Maître Jimmy Ledemazel also brings in an extraordinary background as restaurant manager.

The native Frenchman has been working in fine dining in Europe for decades, most recently working for 14 years in the three-star restaurant Aqua at The Ritz-Carlton in Wolfsburg, Germany.

He has received numerous awards for his work, including Best of the Best at the Chef-Sache Avantgarde Cuisine Festival and Rolling Pin’s Leaders of the Year award.
